    Lesley-
    Nice article. The owner of Passmar is a friend of mine. Great little place in the market. I’ll have to check out the other two markets the next time I’m in town. One concern: when I was at Lazaro Cardenas last year, I noticed the pork was coming out of boxes that labeled the pork as commercially produced in the United States. Sadly, it seems that even Mexico is being forced into the American Agro-Industrial System.

    But I’m getting desperate for conchas and might make a side trip to DF for Bondy next month!

      Yikes on the pork. I’ve wondered about where all the pork comes from in this city (and all the chicken at the street butcher shops, and the fruits and vegetables in the markets), but part of me also didn’t really want to find out, exactly because of the reasons you mentioned. I wish the government here had more transparency, and that it’d be easier to find out where all our food is coming from. At this point all you can do is try to find a co-op. I found one in Xochimilco, just need to do a little more research before I sign up.

      If you’re coming to DF, let me know. Maybe we could get a concha taste-testing group together.
